In 1.x, I preferred twee over the graphical editor. Is there a corresponding text-files-and-command-line thing for Twine 2?

No and Yes!
Twine 2 itself does not have an equivalent to the Twee command line tool but TheMadExile (the developer of SugarCube) has created a version of Twee named
tweego
that supports Twine 1 and 2 story formats.

There is also Twee2 by Dan_Q, early but working (I can tell).
