This might seem like a dumb question, but there haven't seen an answer to this yet.

I don't want to change the color of everything, only one sentence.

I've tried this...

(Color: red "insert what i want to say")

and

(Set: color red "insert what i want to say")

So what should I do.

Hello,

On Harlowe, you can do something like this

(colour: red)[Hello there] And now it's normal

What's inside the [] will be of the desired color, what's not will have the basic one.
